Dandelion Salad Recipe

Dandelion Leaves Make Great Salads

Making dandelion salad is yet another way of making good use of those dandelion leaves in the kitchen.

The dandelion greens are loaded with vitamin A and potassium and many other minerals that are beneficial to your health.

We've included a couple of salad variations for you to choose from.

Dandelion and Tomatoe Salad

Ingredients

  • 2 cups fresh, young dandelion greens
  • 1/4 cup thinly sliced red onion
  • 2 tomatoes, cut in quarters
  • 1/3 cup shredded cheddar cheese
  • 1/2 teaspoon freshly ground black pepper
  • 1 teaspoon finely chopped fresh dill
  • 1/4 cup oil
  • 3 tablespoons vinegar

Directions

Carefully wash the dandelion greens, pat dry and cut into pieces.
Add the onion, tomatoes, and cheese.
Make a dressing with the salad oil, vinegar and seasonings. Pour over the salad and toss well to coat evenly.

Dandelion Salad with Cooked Dressing

Ingredients

  • 4 slices cooked bacon, cut into pieces
  • 2 cups freshly picked, young dandelion leaves
  • 2 hard boiled eggs, sliced
  • 2 tablespoons finely chopped onion
  • 1/4 cup butter
  • 1/2 cup cream or milk
  • 1 egg, beaten
  • 1/2 teaspoon salt/dash freshly ground pepper
  • 1/4 cup cider vinegar
  • 2 tablespoons white sugar
  • 1 tablespoon flour

Directions

Toss chopped dandelion greens, chopped onion, fried bacon pieces and set aside.

In skillet gently warm the butter and cream until the butter melts. In separate bowl, beat the egg and then add salt, pepper, vinegar, sugar and flour.

Blend the egg mixture with the skillet mixture increasing heat until mixture boils and thickens. Stir constantly so it doesn't burn.
Garnish the salad with the hard boiled eggs and pour the hot dressing over everything and toss to coat evenly.
Serve immediately and enjoy!

Important Tip About Dandelion Leaves

Choosing your dandelion leaves in the early spring is best. Getting them at the stage before the plant flowers means they won't be bitter.
