Dandelion Soup Recipe
A Dandelion Recipe The French Way
Brush up on your French accent and have some fun making this cream of dandelion soup. This French dandelion recipe is a delicious combination of dandelion greens and vegetables that's sure to please.Ingredients - about 6 cups dandelion greens, washed and trimmed
- 1 tablespoon olive oil
- 4 cups vegetable stock
- 2 leeks, white/light parts cleaned and sliced
- 1 carrot, peeled and diced
- 2 1/2 cups milk
- 1 tablespoon Dijon mustard
- salt/pepper to taste
- dandelion flower petals for garnish
DirectionsUse fresh, tender dandelion greens if possible. If using mature dandelion plants, blanch in salted boiling water, drain and squeeze out excess water. Chop dandelion greens and set aside.
Heat oil in large pot over medium heat, add dandelion greens, carrot and leeks and cook 5 minutes, stirring often.
Add vegetable stock and simmer for 15 minutes. At medium heat, whisk in milk and cook until slightly thick, stirring frequently.
Puree mixture in blender or food processor in batches, being careful of the hot liquid. Pour all puree back into cooking pot, season with salt, pepper and dijon mustard.
Serve in bowls garnished with the beautiful, bright yellow dandelion flower petals and enjoy!
